Cinnamon Raisin Sourdough Bread
Ingredients:
• Sourdough starter: Active and bubbly (around 1/2 cup)
• Flour: 1 1/2 cups Unbleached All-purpose, 1 1/2 cups Einkorn flour (or whole wheat)
• Water: Warm 1 cup
• Sugar: 1/4 cup-To feed the yeast and sweeten the dough
• Salt: 1 tsp
• Raisins:3/4 cup soaked in warm water for about 10 minutes, then drained
• Cinnamon sugar mix: 1-2 T cinnamon and 1/4 cup sugar
Instructions:
Mix the Dough: In a large bowl, combine sourdough starter, water, flour, sugar, and salt. Mix until a sticky dough forms.
Rest and Rise: Cover and let the dough rest for 30 minutes, then stretch and fold it every 30 minutes for the next 2-3 hours to build gluten.
Add Raisins and Cinnamon Sugar: After the first rise, gently work in the raisins and sprinkle the cinnamon sugar on the dough, folding it in carefully.
Shape the Dough: Shape the dough into a loaf and place it into a greased loaf pan or onto a baking sheet.
Final Rise: Let it rise again for 1-2 hours until it’s doubled in size.
Bake: Preheat your oven to 375°F (190°C). Bake for 40-45 minutes, until golden and cooked through.
Remove from pan & let cool completely on a wire rack.
