Another Thanksgiving has come and gone! I hope you had a wonderful time with your friends and family! Thanksgiving is a perfect ending to one of my favorite seasons...fall! It is so important in this busy world we live in to stop and take time to reflect on ALL the goodness in our lives. It is hard to find words to express my gratitude for the love, joy, peace, provision, and family the Lord has blessed me with.

As the temperatures drop and the fall days turninto winter days, I am drawn more and more to comfort food. There is something so soothing when I have a delicious, steaming hot bowl of homemade soup and can curl up on the couch in my favorite blanket in front of the fire on a cold evening. It feels like a big hug in a bowl. That’s when this Creamy Corn Chowder takes center stage. It’s quick and easy to make but tastes like it simmered all day—perfect for busy weeknights or lazy afternoons.

This recipe is the epitome of cozy cooking for two. While this chowder is satisfying on its own, it also pairs beautifully with a crisp green salad for a light balance or a toasty grilled sandwich for a heartier meal. Sometimes, I whip up a batch of cheddar biscuits to serve alongside or if I am in a hurry, I like to throw some crispy oyster crackers in my bowl.—it’s like the ultimate comfort food combo! This chowder brings the perfect balance of creamy, hearty goodness!

This chowder is perfectly portioned, but if you do have a little extra, it reheats beautifully the next day. For those chilly evenings when all you want is something warm and soothing, my Creamy Corn Chowder is the answer. Light a candle, put on your favorite playlist, and enjoy a simple, delicious dinner with someone you love—or just treat yourself to a quiet, comforting moment.

Creamy Corn Chowder

Ingredients

4 slices bacon, cooked & chopped

1/2 onion, diced

2 cloves garlic, minced

2 medium potatoes, diced

1 can (15 oz) corn (or 2 cups fresh or frozen)

3 cups chicken broth

3/4 cup heavy cream or whole milk

Salt and pepper to taste

Fresh chives for garnish

Instructions

In a large pot, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside, leaving the drippings in the pot.

Add onion and garlic to the bacon drippings and sauté until softened. Add potatoes, corn, and chicken broth. Bring to a boil, reduce heat, and simmer until potatoes are tender, about 15 minutes.

Stir in the cream, season with salt and pepper, and add the bacon back in. Garnish with fresh chives and serve.
