There’s something invigorating about a cool fall morning when the air feels crisp, and you can almost smell the changing leaves. Today was one of those mornings, and as soon as I stepped outside, I felt a familiar excitement for the season ahead. Fall has always been one of my favorite times of the year—it’s a time when everything seems to slow down just a little, and you can embrace the warmth and comfort of home.
Feeling inspired, I decided to make us a breakfast that matched the cozy, autumn vibe: Individual Oat and Apple Breakfast Cakes. They’re filled with all the fall flavors we love—oats, crisp apples, cinnamon, nutmeg—and I added a bit of protein powder to keep us going for the day. Despite the name, these cakes are packed with wholesome goodness, not sugary sweetness, making them the perfect start to a crisp fall morning. Plus, they’re so quick and easy to make that even on busy days, I know I can whip these up in no time.
But today’s breakfast was about more than just the food. As I prepared everything, I couldn’t help but think about my mom. She’s always with me in these little moments, and today was no different. Oat and Apple Cake Recipe
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes
Ingredients:
1 cup rolled oats
1 small apple, diced
1 1/2 T cinnamon
1/4 tsp nutmeg
1 tsp baking powder
1/2 t salt
2 egg
1/2 cup milk (or nut milk), you can add more if too thick
1/2 C applesauce
1 scoop vanilla protein powder (optional)
A drizzle of maple syrup or honey for sweetness
Instructions:
Preheat your oven to 350°F (175°C).
Mix all the dry ingredients in a bowl: oats, apple, cinnamon, nutmeg, baking powder, salt, and protein powder, if using
In another bowl, whisk together the egg, milk, and applesauce. Add to the dry ingredients and stir until combined.
Divide the mixture into individual ramekins or a muffin tin.
Bake for 20-25 minutes or until golden brown and firm to the touch.
Serve warm, with a drizzle of maple syrup or honey and a dollop of yogurt ( or whipped topping for a little more fun)!
