Today, let's explore one of my favorite cuisines, Mexican! I will be cooking a delicious dish: Shrimp Enchiladas and Horchata. It's like taking a flavorful journey to Mexico!

This recipe doesn't require a long list of ingredients, and it's quite simple to make. Whether you're cooking for two or just for yourself, you can easily adjust the portions to suit your needs. My recipe is so easy to cut in half but I am making a full recipe so I will have a dish for Sunday lunch.

Horchata!

Preparing this recipe is so easy, I know this will become one of your favorites! Mix your ingredients together, roll them up in tortillas, and add a little enchilada sauce and cheese, and you're good to go! Despite its simplicity, this dish packs a punch of flavor that will impress your taste buds. I added a fun twist to our mealtime by making some Horchata to enjoy with our meal. We love this sweet, creamy, and spicy drink! It also takes us back to some very special memories of our son and his wife, (Jacee). She introduced us to this drink at a big fiesta party we put together while Jayd was still with us. We all dressed in colorful outfits, played festive music, and had our sombreros. It was a great night!
