Savory Roast Sunday: A Cozy Meal for 2

Today, we are jumping into the heart of comfort food with a little twist! Whether you're whipping up dinner for yourself and your sweetheart or enjoying a peaceful evening alone, this dish promises to make your heart smile!

Imagine this: a tender roast, perfectly seasoned and slow-cooked to perfection, accompanied by creamy mashed potatoes full of buttery goodness, rich gravy, a dollop of sour cream, and a burst of freshness from a ripe grape tomato on top. It's artfully assembled in a dish, layered to resemble a delectable ice cream sundae. So Fun!!

Sounds like a dream, right? Well, with a little time and effort, you can make this playful dish a reality in your own kitchen.

First up, let's talk about the star of the show: the roast. Choose your favorite cut of beef, get your crock pot, and spray with cooking spray. Season your roast generously with salt, pepper, garlic powder, season salt, olive oil, and other herbs and spices you love. I like to massage my seasonings into my roast with my fingers. Add some vegetable broth or whatever you have on hand. You can use water if you don’t have any broth. If you are like me and love cooked carrots and onions, throw some in with your roast and save them for later. Let it cook on high for about 4-5 hours and then on low for 2-3 more hours until it's tender and juicy. The aroma alone will have your mouth watering and your stomach growling!

Focus on the potatoes while the roast works its magic in the crock pot. Boil them until soft and mash them with lots of butter, 1/2 & 1/2, and a pinch of salt & pepper, until they're smooth and creamy. These fluffy mashed potatoes will be the perfect partner for your savory roast, soaking up all that delicious gravy.

Speaking of gravy, don't forget to whip up a batch from the pan drippings of your roast. There's nothing quite like homemade gravy, and it's surprisingly simple to make. Just take the broth from the crock pot, whisk in a bit of flour to thicken, and season to taste with salt and pepper. Trust me, you'll want to pour this gravy over everything!

Now the fun begins! Let’s assemble our sundae! If you have a cute bowl with a stem it works nicely. If not, you can use a cute bowl. First, put some mashed potatoes on the bottom, then add sliced or shredded roast, and pour your delicious gravy on top. Now, add a dollop of sour cream, and for the “cherry” on top, use a grape or cherry tomato!! This is so adorable!! Then, sit back, relax, and savor every delicious bite of this comforting meal.
