Zesty Kick Lasagna

Thank you so much for stopping by! On most days you will find me in my kitchen cooking for 2, but today is an exciting day because we have some family from Texas coming here to visit. When it comes to hosting guests, few dishes can rival the warm and inviting presence of a well-made lasagna. Its layers of pasta, rich sauce, creamy cheese, and savory fillings create a symphony of flavors that leave everyone coming back for seconds. It is a great "go to" recipe to have in your kitchen. Also, if you aren't having company but are craving the comfort of a rich lasagna, no worries. This is the perfect recipe to fix in a couple of smaller dishes and freeze them. You can have a meal now and some for later!
Every great lasagna begins with a delectable sauce. The longer it cooks the richer and fuller the flavor will be. If you have access to fire-roasted tomatoes, I suggest you use those. They will take the flavor level up a notch. I have added some hot sausage to mine to add a bit of a kick to the sauce. We are all about spice and heat in my family.

While it may require some extra effort, the delicate taste and texture of fresh pasta elevate the dish to a new level of indulgence. Cooking for two may be my usual routine, but when the occasion calls for it, I look forward to the opportunity to create a lasagna feast that leaves a lasting impression on my family and guests. I know we could have easily gone out to eat at a restaurant but for me, nothing takes the place of opening up my home and my table to friends and family. It is so much more intimate and personal at home versus a crowded and loud restaurant. From the first mouthwatering bite to the shared moments of joy around the table, gathering with family for a home-cooked meal makes for a beautiful night to remember!
