Comfort in a Bowl – Chicken Gnocchi Soup for My Love

When life calls for comfort, few things satisfy like a warm, homemade soup—especially one with a special family story behind it. Recently, after Kyle had some dental work done, I asked him what he would like me to make for him that would be easy to eat. Without a second thought, he knew exactly what he wanted me to make: chicken gnocchi soup.

This isn’t just any soup for us; it’s a favorite that brings a bit of Jayd’s memory to the table. Jayd, our son, was the one who introduced us to this soup. It became an instant hit and has been a staple in our kitchen ever since. Every time I make it, I’m reminded of his excitement over that first bowl and the pleasure he took in sharing something so comforting. Jayd was a very picky eater and I was a little surprised that he liked it. It was a very good surprise!

So, as I simmered the ingredients—the tender chicken, pillowy gnocchi, and colorful veggies blending into a creamy, fragrant broth—it was hard not to think about Jayd and all the bowls we shared. It’s a rich, decadent soup, but somehow it always feels light and full of love. For Kyle, this was exactly the fix he needed.

Seeing Kyle dig into his bowl, his face lighting up, was a reminder of how food can bring us close—even on those tender, tired days. Chicken gnocchi soup will always be a bit more than just a recipe in our family. It’s comfort in a bowl, love ladled up, and memories with every spoonful.

Creamy Chicken Gnocchi Soup

Ingredients

1 ¼ cup finely chopped sweet onion
1 cup diced carrot
1 cup diced celery
1 Tbsp avocado oil
4 cloves garlic, pressed
29 oz. chicken broth
¼ teaspoon dried rosemary
¼ tsp dried thyme
Salt and pepper
1 lb boneless skinless chicken breast tenderloins
1(16 oz) pkg potato gnocchi
6 Tbsp butter
6 Tbsp all-purpose flour
1 ½ cups milk
¾ - 1 cup heavy cream

1/4 teaspoon freshly grated nutmeg

2 cups packed fresh spinach
Shredded Parmesan cheese, for serving

Directions

Heat 1 Tbsp oil in a large saucepan over medium-high heat. Add onion, carrot, and celery and sauté 6 minutes, add garlic and sauté 1- 2 minutes longer.
Pour in broth, add rosemary, thyme, salt, and pepper to taste.
Add in chicken and bring soup to a boil, reduce heat to medium-low, cover, and allow to simmer until chicken is cooked through about 8 - 12 minutes.
Meanwhile, while the chicken is cooking, melt butter in a medium saucepan over medium heat. Add flour, cook, and stir constantly for 1 minute.
While whisking vigorously, pour in the milk and continue to whisk vigorously to smooth any lumps—season with salt, pepper, and nutmeg to taste.
Cook until the mixture thickens and lightly boils while whisking constantly. Stir in cream, and remove from heat.
Once the chicken in the soup has cooked through, remove it from the soup and allow it to rest for 5 minutes. Then, dice or shred it into pieces.
Add gnocchi to the broth mixture, cover, and simmer for the recommended time directed on the package, about 5 minutes.
Stir the milk mixture into the broth mixture, add chicken and spinach. Cook, while stirring frequently, 1 - 2 minutes longer.
Serve warm with Parmesan cheese if desired.
