When cooking for two, roasting a whole chicken or turkey breast is a great way to help with meal prep. You will have plenty of meal options with little effort.

Start by picking up a fresh, bone-in turkey breast from your local market. The bone enhances the flavor and juiciness, making it a key ingredient for a tasty outcome. The first step in the roasting process is to rinse it off and then pat the turkey breast dry with paper towels to ensure a crispy skin.

Season generously with a blend of your favorite herbs and spices. I used a combination of garlic powder, tarragon, honey siracha, and a pinch of salt and pepper. Oh, and don't forget the butter!! You gotta have the butter! Make sure you do all sides of the turkey.

Preheat your oven to a moderate temperature, around 400°F. Place the seasoned turkey breast in a roasting pan, and if you desire an extra burst of flavor, add aromatic vegetables like carrots, onions, and celery to the mix. This not only infuses the meat with delightful flavors but also creates a savory base for future dishes. I just used the onions in this one.

For optimal results, use a meat thermometer to ensure your turkey breast reaches an internal temperature of 165°F (74°C). This guarantees a perfectly cooked, safe-to-eat centerpiece for your meal creations. Depending on the size of the turkey, this will probably take 1 1/2 -2 hours. Always check it though to be safe.

Once the turkey breast has been roasted to golden perfection and allowed to rest, it's time to unleash its potential. For a satisfying sandwich, thinly slice the succulent meat and layer it between slices of your favorite bread. Add condiments, fresh greens, and maybe a slice of cheese for a sandwich that will make your taste buds dance.

For a lighter option, turn your roasted turkey breast into a delightful salad. Dice the meat into bite-sized pieces and toss it with crisp greens, cherry tomatoes, cucumber, and your choice of dressing. The result is a refreshing turkey salad that's as nutritious as it is delicious.
