Taco Soup with a Twist

Oh so good!!

There's something about a bowl of warm, hearty soup that wraps you in comfort, especially when it's as easy and delicious as this Taco Soup for Two. It is the perfect choice for a cozy weeknight dinner or whenever you need a fuss-free, soul-soothing meal. This recipe is not only a breeze to make but is also ideal for those times when you want to prepare ahead and freeze for later. 

Another reason I love this soup is that the ingredients are very budget-friendly and usually something you have on hand. All you need is hamburger meat, canned corn, diced tomatoes, ranch-style beans, rotel, Taco Seasoning, and Hidden Valley Ranch Seasoning. For the toppings, you will need sour cream, shredded cheddar cheese, crushed tortilla chips, and sliced jalapenos. Don’t forget, you can change these ingredients to suit your taste. It’s your kitchen, you can do what you want to.

Even though I am cooking for two, when I make soup I like to make extra so I have some to freeze for a meal later. This soup makes that so easy. 

Just let the soup cool completely before transferring it to airtight, freezer-safe containers. Label with the date and freeze for up to 3 months. When you are ready to eat, simply thaw it overnight in the refrigerator and warm it on the stove or in the microwave. Easy peasy!!
