A Gift from the Heart: My Mom’s Zucchini Bread and the Spirit of Christmas Giving

For me, while I am reflecting on our time in the kitchen, it’s my mom’s zucchini bread—the smell of cinnamon and nutmeg wafting through the house, her hands gently mixing the batter, and the way a single loaf could make a moment feel like home. That recipe wasn’t just food; it was love baked into every slice, a little reminder that even the simplest gestures carry the deepest meanings. This was a favorite with friends and family. She always made plenty of extra because she loved having it on hand for sharing. I remember her postman, garbage collector and the UPS man always looked forward to it.

Mom’s Zucchini Bread
Ingredients
3 eggs
2 cups sugar
1 cup olive oil
1 tsp baking soda
1 tsp baking powder
1 cup nuts ( I use pecans but you choose your favorite)
3/4 cup golden raisins
2 tsp orange rind, grated with microplane
2 cups shredded zucchini
3 tsp vanilla
3 cups unbleached, all-purpose flour
1 tsp salt
2 tsp cinnamon
Directions
Preheat oven to 325 degrees. Grease or spray your pan. you can use 2 loaf pans, a bundt pan, or mini loaf pans. Beat eggs until foamy. Add sugar, oil, and zucchini. Mix well. Add vanilla and the rest of the ingredients. Bake at 325 degrees for 45 minutes to an hour.
