Easy Pineapple & Mango Chicken Bundles: Delicious Recipe for Any Weather

I AM BACK! I am so sorry, but I have been MIA for a while. Even when you are cooking for just 2, life can get very very busy!! I hope you have had a good week. I have had a great one! Saturday was such a good day. We started with a good country breakfast at RJ’s, which is a little community store close to our house. The next stop was in search of fresh vegetables and other goodies from our Amish neighbors! We found some beautiful ripe tomatoes. We were able to pick up a few heirloom tomatoes, which are my favorite! I LOVE the different shapes and colors! There's something about grilling outside that I absolutely love. The sizzle of the food, the aroma that wafts through the air, and the satisfaction of cooking in the open. However, not every day is perfect for grilling, especially when the weather decides to be uncooperative. Recently, I had one of those days when the rain poured down, but I didn't let it stop me from preparing one of my favorite dishes: Pineapple and Mango Chicken Bundle.

This dish is a go-to for me because it's quick to prep and easy to clean up. Plus, the combination of pineapple and mango brings a delightful tropical twist to the dish. It's a perfect blend of sweet and savory.

While the oven might not provide the same smoky flavor as the grill, it does a fantastic job of cooking this dish to perfection. It just takes a bit longer, but the result is well worth the wait.

The preparation process is simple and straightforward. Here’s how I did it:

  1. Ingredients: Start with fresh marinated chicken thighs cut into 1“ chunks, juicy pineapple, and ripe mango chunks. Add red pepper, poblano pepper, and green onions. I also add a touch of seasoning to enhance the flavors.

  2. Assemble: Place foil sheets on a cookie sheet. Lay the chicken breasts flat and place the veggie mixture on top. Add prepared sauce.

  3. Oven Time: Preheat the oven to 375°F (190°C). Place the chicken bundle on the foil-lined cookie sheet. Wrap up tightly.

  4. Bake: Cook the chicken bundle for about 40-45 minutes,

Once the chicken bundle is done, it comes out juicy and flavorful, the sweetness of the pineapple and mango perfectly complement the savory chicken with just a touch of heat.

One of the best parts about this recipe is the minimal cleanup. Since everything is cooked in one dish, there are fewer pots and pans to deal with afterward. This makes it an ideal meal for busy days when you want something delicious without the hassle. When you are able to use the grill, it also keeps your house cool in the summer! Plus, it's a great way to bring a taste of the tropics to your dinner table, rain or shine!
