The filling is such a sweet surprise that will make your mouth dance! One of my favorite things about these cookies is that they were one of my mom's favorites! She loved them with almost any filling, but her favorite was raspberry and apricot. In sharing this recipe with you, I am sharing a little piece of my heart! I made them many times for her and every time I make them now it is a sweet reminder of her.

The name "thumbprint" comes from the method used to create the indentation in the cookie dough. Simply press your thumb (or another small object) into the dough ball to create a shallow well.
