I decided to use walnuts instead of pecans.

I changed up my recipe just a bit. I am trying to make healthier choices with our food. This is a great way to do that without losing flavor or richness. I added coconut sugar instead of processed white sugar, instead of using just all-purpose flour, I used half whole wheat and half unbleached flour, I substituted the sour cream with greek yogurt, and I added flax meal for extra fiber.

So you can see this is a much healthier recipe. The good news is they still taste AMAZING! No one will know if you don’t tell!

Here are just a few tips to remember

1.Make sure you use ripe bananas for the best flavor and texture. The bananas should be yellow with brown spots. The riper the bananas are, the sweeter your muffins will be.

2. Do not overmix the batter. Overmixing can result in tough and dense muffins. Just mix until the ingredients are fully incorporated and moist.

3. Store leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week. You can wrap them in plastic wrap and place them in a large baggie and freeze them also.
